Meal Prep Week of Feb 25, 2018 – Broiled salmon with cilantro lime rice and seafood veggie boil; chicken salad wraps; chicken sausage, fruit and cheese; peanut butter protein bites

 

For this week, Boo Boo and I made the following:

  • For breakfast, we had chicken sausage, low-fat mozzarella cheese, and fruit.
  • For lunch, we had chicken salad wraps with a side of Sun Chips.
  • For dinner we had broiled salmon with a side of quinoa and seafood veggie boil.

I’m going out of town this week, so since I had so much of the 13-bean soup leftover from last week, I decided only to make another breakfast and shop for a few snacks.  After searching on Pinterest, I saw two great recipes – one for a breakfast casserole with kale, sausage and sweet potato and another for English muffins. Meal prep week of February 12, 2017 – Spinach and artichoke stuffed spaghetti squash; zesty cilantro lime shrimp over salad greens; mixed peppers and mushroom breakfast cups in smoked turkey

Welcome back for another week of meal prep!  This week I was on the go, literally in the grocery store deciding as I was going through the aisles about what I was going to do this week for meal prep.  I decided on one meal of zesty seasoned shrimp on salad greens and another dish with spaghetti squash, this time stuffed with spinach and artichoke.  And for a breakfast option, I made breakfast cups again with mushroom and mixed peppers, but used smoke turkey as well.
