Meal prep week of 4/9/2017 – General Tso’s tofu; Marinated baked wings in a zesty dry rub; breakfast-stuffed peppers; low-carb muesli

This week I’m prepping for two weeks since next week is Easter, and I will be out-of-town for a few days and don’t want to come back unprepared  Plus, I welcomed back an old friend – cereal!

So, on the menu for this week and next are the following:

  • General Tso’ tofu
  • Marinated baked wings in a zesty dry rub
  • Spring salad with crumbled feta
  • Breakfast-stuffed peppers
  • Low-carb muesli

Meal prep week of 3/19/2017 – Snacks for the road; Broccoli, mushroom, and turkey sausage casserole

Meal prep week of 3/12/2017 – Caprese stuffed portobella mushrooms with steamed broccoli; spinach and ricotta zucchini cannelloni with oven roasted sweet potatoes; turkey sausage and egg breakfast sandwiches

After a week with lots and lots of shakes, it’s back to regular meal prep for this week.  So for this week, I have the following:

  • Caprese stuffed portobella mushrooms served with steamed broccoli
  • Spinach and ricotta zucchini cannelloni with oven roasted sweet potatoes
  • Turkey sausage and egg breakfast sandwiches

Meal prep week of 2/26/2017 – Breakfast casserole, low-carb Everything English muffins

I’m going out of town this week, so since I had so much of the 13-bean soup leftover from last week, I decided only to make another breakfast and shop for a few snacks.  After searching on Pinterest, I saw two great recipes – one for a breakfast casserole with kale, sausage and sweet potato and another for English muffins. Meal prep week of February 12, 2017 – Spinach and artichoke stuffed spaghetti squash; zesty cilantro lime shrimp over salad greens; mixed peppers and mushroom breakfast cups in smoked turkey

Welcome back for another week of meal prep!  This week I was on the go, literally in the grocery store deciding as I was going through the aisles about what I was going to do this week for meal prep.  I decided on one meal of zesty seasoned shrimp on salad greens and another dish with spaghetti squash, this time stuffed with spinach and artichoke.  And for a breakfast option, I made breakfast cups again with mushroom and mixed peppers, but used smoke turkey as well. With having to take time to make things for the Superbowl this week, I needed quick and easy for my meal prep for this week.  So I headed to Pinterest to look for some ideas to make things with stuff I already had on hand that would not require me to go back to the grocery store.  I decided on a meal of cheesy meatloaf and mixed vegetables and another of garlic parmesan chicken with mushrooms and zoodles.  Continue reading
