Meal prep week of February 12, 2017 – Spinach and artichoke stuffed spaghetti squash; zesty cilantro lime shrimp over salad greens; mixed peppers and mushroom breakfast cups in smoked turkey

Welcome back for another week of meal prep!  This week I was on the go, literally in the grocery store deciding as I was going through the aisles about what I was going to do this week for meal prep.  I decided on one meal of zesty seasoned shrimp on salad greens and another dish with spaghetti squash, this time stuffed with spinach and artichoke.  And for a breakfast option, I made breakfast cups again with mushroom and mixed peppers, but used smoke turkey as well. Today (2/3/2017) marks my 4th month since surgery (Oct 3, 2016), and to say that it’s been a REAL STRUGGLE would be an understatement.  This has absolutely been the hardest thing I have ever done in my entire life…harder than 6 years of college, harder than 3 years of grad school, harder than the years of work I’ve had to put into my career, harder than buying a house and car…I almost would do those things over again than this past year leading up to the surgery and what I’ve had to do post-surgery. I want to admit something upfront – I am single, I have no kids, and I work from home.  So in comparison to many of you, I probably have a bit more leeway in terms of how much time, energy, and money I can dedicate to exercise.  I don’t want to undermine the fact that many of you feel stretched to your limit in terms of time, energy, and money, and at the end of the day don’t have much more to give to anything else.   Continue reading
